Grillin' Season

With the arrival of Spring also brings the arrival of Grillin'. I got out the grill tonight and fire'd it up for some of my wife's delicous hamburgers. Who else has broke out the grill already this year?

How about we share some grillin' recipes.

My favorite that I like to do when we have company over is to do some Bacon wrapped Shrimp. I take large peeled shrimp and wrap with a piece of bacon, then put about 4-5 on a bamboo skewer. Cook on a grill will applying BBQ sauce. I dont use just one kind I make up my own by using equal parts of Sweet Baby Rays, Open Pit, and Jack Daniels sauces. I did the same thing with quail last year and it turned out good as well.

So lets here some of your favorite on the grill recipes.

Heck, I think I've grilled 3 or 4 times already.  ;D  Brr.  My favorite recipie is lobster tails on the grill.  I split them and cook them shell down.  I take a stick of butter per tail and put it on top and let the heat melt it down into the tail.  Then I finish it off with lemon juice drizzled over the tail until I take it off the grill.  Most of the butter and juice drain out during cooking, leaving you with a perfectly done piece of lobster.  Mmmm.

Last week we got a couple of inch and a quarter thick NY strip steaks.  Grilled them with Montreal seasoning until they were medium.  Motreal also works great on wings.  Grill them with Montreal seasoning without using hot sauce, then apply the hot sauce right before you eat them.  Dang, now I'm hungry.   ;D

I never quit grillin', almost caught my garage on fire in mid-January but thems hot dogs is good eats.  ;D

I always try new things on the grill, but I think my best food is corn on the cob, wipe the shucked cob down with olive oil and wrap it completely in tin foil, a couple of layers thick, throw them on the bun warmer and cook, keep rolling them periodically so they don't burn, if the foil looks burnt the cob is too.   ;)

I cook my corn on cob in the husks, I just soak them in water for a while before hand, just place on the grill, and roll periodically. I do the same thing when I go camping, soak in water then just lean again a log in the fire and cook, making sure to turn them so all sides get even cooking time.

McCarters Cajun Style Hot Dogs

What you will need:

One package favorite hot dogs

One package favorite buns

12 pack Miller Lite or comparable cheap canned beer

First start out by cracking a beer and placing the hot dogs on a sturdy paper plate.  Drink beer.  Get grill going while still drinking beer.  Let grill heat to maximum temperature all the while still drinking the beer.  Trust me, the beer drinking has a lot to do with this recipe.  Next, find a comfortable lawn chair, 5 gallon bucket, or pile of empty beer cans to sit on while the grill is heating up so you are more at ease while drinking your beer.  Once the grill is super hot, drink a beer, then throw them dogs on the fire.  Grab a couple beers to keep you company while your meat bi products are roasting.  Go in the house and turn on Red Wings playoff hockey or a good fishing show.  If there are no hockey games or fishing shows, you may turn on something else as long as it is not Friends or Everybody loves Raymond.  Have a few more beers.  When the scream of fire engine sirens wakes you up from you beer coma, the dogs are done.  These crisp little morsels of pork lips and beef bums are best served one ant covered buns that you forgot to cover cuz you drank too much beer and a squirt of ketchup and mustard, all washed down by a nice cold beer.  

Another good one

McCarters Beer Battered Fruity Pebble Fish Fillets

What you will need:

4 heart Walleye Fillets

Fruity Pebbels cereal

12 pack Miller Lite or comparable cheap canned beer

Salt

Milk

Pretty much the same as above but fish doesnt taste as good burnt so just make a bowl of fruity pebbles and call it a night.

There is no off-season for grilling at our house.
I like to do ribs from country smoke house from Almont.  I don't have my exact recipe here, but the secret is using indirect heat.  Only fire up half the grill and put the ribs on the side that is off.  You can cook them this way for a long time.  Slow smoking is the best..They just fall off of the bone.

I never quit grilling.  I never fry meat or use the broiler in the house.  I use a propane grill, so it's easy.  The clean up is way easier than scrubbing anything out in the sink. 

Here are a few pointers. 

1.  Start any kind of "fatty" chicken in the house in either the microwave, or boiling water.  It'll reduce the amount of flair ups on the grill.
2.  In addition to meats try some fruits and vegetables on the grill.  The sugars will carmalize and you'll get a very sweet flavor.  Sometimes I brush things with olive oil to start off.   Things that work particulary well are:  Fresh pineapple, zuchinni, summer squash, sweet onions, green peppers, corn on the cob, and portabella mushrooms.

Recipe for Grilled Portabella Mushrooms

1.  Brush shrooms clean with a damp paper towel. 
2.  Brush them on both sides with olive oil.  Let the gills soak it up.
3.  Place them gill side up on the grill. 
4.  Sprinkle em with garlic salt.
5.  When the juice starts to come up out of the gills, top em off with some mozerella cheese. 
6.  Melt the cheese, and enjoy. 

Recipe for White Fish
1.  Dice onion and sautee in butter until onions are clear.
2.  Melt more butter in the pan.
3.  Add lemon juice, and a dash of garlic salt.
4.  Dip fish fillets into the mixture, and place on grill skin side down.
5.  Grill until the fish meat "flakes" easily with a fork.  Be careful not to over cook.  Do not flip the fillets over. 

I also have several recipes for grilled Salmon, bbq ribs, chicken, making the perfect steak, etc....  I'd be glad to trade recipes for guided fishing trips to notable Bass waters.. 
But for now, I gotta go fix dinner.  We're having BBQ/ lime pork chops out on the grill.
So much water.  So many lures.  So little time.

whoops - i'll have to get back w/y'alls on my favorite which is "beer butt chicken" recipe - its great on the grill....stayed tune.

 grilled outside earlier and remembered i still owe a recipe here. so here's "beer butt chichen"

get a whole fryer chichen.....or small enuff to fit on grill w/closed cover

"the rub"
at least 2 tlb spoons of each:

kosher salt
paparika
garlic pwrdr
onion pwrdr

cayan pepper-1 tbl spoon

(more amounts vary based on your taste buds)

mixed all together and literally rub all over outside chicken & in.
1/2 to 3/4 can of beer (your favorite-we use budweiser).
they have holders for this now so chicken won't topple over, so take whole chicken (should tie the legs together) and slide that puppy right over can w/the beer in it.
set upright in pre-heated grill and cook w/closed lid for 1.75 to 2 hrs on med. checking only so your not burning the bird.
after that pull chicken off can and eat away.
if it feels good - SET THE HOOK!!

Man you guys need to check out this web site if BBQ is your game. It bardecuebible.com, Lots of good info and some yummy recipes to try. I have a Char-griller and when I cook ribs they are soooooooo good. Doing a slab tomaro with some chicken.
